The installation steps are as follws:
Step 1. If you use a database table prefix other than zen_ you need to edit the included database_mod.sql file so that the zen_configuration table name accurately reflects the name in your database.
Step 2. From Admin > Tools > Install SQL Patches, run the sql query contained in the file database_mod.sql from this package. You can also run the query from phpMyAdmin, but be sure to add the database table prefix first if you use one.
Step 3. Make sure that you have backup copies of your original files.
Step 4. Upload the modified files to your server.
Step 5. From your store admin panel, select Configuration>My Store. The new Time Zone Offset field should now be on that page: set the offset you require.

- How do i know / confirm step 1 ?
You can look at the table names using phpmyadmin if you have access to it- How do i make sure i have a compete backup of all the site?
????You just make a backup of the files and the DB

ic got access to phpadmin....but have no idea where to start looking (or what im looking for:oops:)

enter phpmyadmin and select the correct database if you have more than one and a list os tables sould be presented.
Look at the table names and see if the have a prefix
i.e. normal
configuration
with a prefix:
zen_configuration
or any other prefix that you might have
