I tried that:
Set Include Product Listing Sub Categories Image & Include Product Listing Top Categories Image both to "false" and they still show up.
I even emptied my cache and tried in two different browsers.

Here is the advice that worked for me:
You are actually talking about the product info page, not product listing.
Try these (lots of possible combinations):
Configuration > Product Info >
Previous Next - Button and Image Status 0
Previous Next - Navigation Includes Category Position 1
Previous Next - Navigation Includes Category Name and Image Status 1
Previous Next - Navigation Bar Position 1
Previous Next - Button and Image Settings

Hi- im actually having trouble getting my category images off my product listing pages. i went to configuration > product listing > Sub Categories Image AND Include Product Listing Top Categories Image and set both to false, yet still theyre showing up on the product listing pages.
i just transferred my store from one server to another; on the previous server i had successfully turned off the category images on the product listing pages, so im not sure why exactly theyre showing up now on the new server. thought i'd share that bit of info just in case it mattered.

I take it you've gone to Admin --> Configuration --> Product Info and turned off the "Previous Next - Navigation Includes Category"?

Hm, that was already off, actually. But thanks for the suggestion.
I realize I might not have been clear on my problem- my category image thumbnail is showing up on my product listing pages (not product info).

because im pressed for time, i went around the ideal admin tools and tinkered with the template file. in tpl_index_product_list.php i removed the following code near line 17:
<h1 id="productListHeading"><?php echo zen_image(DIR_WS_IMAGES . zen_get_categories_image($current_category_id), zen_get_categories_name($current_category_id), HEADING_IMAGE_WIDTH, HEADING_IMAGE_HEIGHT, ' align="middle"' ) . '<br />' . $breadcrumb->last(); ?></h1>
i felt comfortable doing this because the lines i deleted weren't even in the template_default/tpl_index_product_list.php file to begin with!
also noteworthy: i tried using these css workarounds:
#productListHeading img {display:none} and
#productListHeading img {height:0; width:0}
the first method got rid of the image, but it left a clear space gap above the category name. so i then tried the second method, and that gave me the same result. so thats why i ended up just deleting the php above.

I think you were too specific in your css. According to the code you removed, the image is inside an <h1>; removing the image won't remove the <h1>. After the image, there is a <br /> and the category name output; the <br /> is still there with the image gone, too.
Try
#productListHeading {display:none}
to suppress the whole heading without code changes.
If you want the category name, you might try
#productListHeading img, #productListHeading br {display:none}

OT- beautiful site - but a bit heavy on the page size - http://www.websiteoptimization.com/services/analyze/wso.php?url=http://www.bridgetbullen.com/store/
