Placing orders without check-out, manual shipping calculation and notification

We are still very small and like to start without shipping and payment modules at check-out; customers should be able to just place an order, then we would calculate the shipping costs manually, ask the customer whether he agrees and if so to pay by simple transfer, and then ship the package upon receiving payment.
Is this possible with zen-cart and if so, how?
If not, an alternative suggestion would be welcome too!

You can set this up for contact for details/shipping but if you are going to ship via UPS or USPS why not use the respective module and let the customer see what the shipping is right as the order is placed?

Or set it up to show what you are charging as part of the process.

This is preferable as the customer, if they has an option of where to buy will normally opt for where they know the full cost before making the purchase
