item specific shipping options?

We are setting up a online store that sells food items. we would like to set up item-specific shipping options. A example would be:

Cookies can be shipped "overnight 1 day" or "2 day". While frozen pizza can only be shipped "overnight 1 day". So basically, can we display different shipping methods for different items. Currently we are using the UPS XML shipping module, but are willing to change, can anyone help?

What I would do, if I were you, is give each item its OWN shipping charge. As far as I know, there isn't a mod out there that would allow you to have different official shipping METHODS for each item, but if you use the method I described here:

You can give each item its own shipping cost, then in the description of that item, state how it will be shipped. "this item can only ship overnight" and then it will have the shipping cost you gave it.

I see, thanks for the quick post. It is an interestesing strategy. There is a problem with this method for our situation though. There is no specific shipping cost that we can attach to the product. We would like local area customers to get a good deal with the cheapest method, and non-local area customers would have to be charged differently with shipping. The UPS XML module can calculate for distance, but I want to remove "2nd day shipping options" only for frozen items.

This is definitely going to require some customizations.

I would start by adding a field to the products for shipping method allowed.

I'd rank the shipping methods by number by speed, i.e.:
0 = Nxt AM
1 = Nxt
2 = Nxt PR
3 = Nxt Save
4 = 2nd AM
etc.

So each product would have a minimum shipping speed acceptable.

Next, you'd need some code that intercepts the shipping methods look-up, checks all products currently in the shopping cart, finds the smallest number, and removes any shipping methods with a higher number.

There is one draw-back however: UPS ground is a 1 - 5 day service from and to most US locations. (I'm just assuming that you're in the US.) If someone is in the next city over, they might get 1 day delivery with UPS Ground, but you'd be limiting them to paying for a 'faster' service.
