Need help with Categories

I have to preface this with "I'm new with limited knowledge" so if this sounds stupid, I apologize in advance. Anyway, on each of my pages there is a block that say "categories" and the specific categories are listed beneath the word categories. I don't want the word to be "categories". I want it to say something else. Then I want the categories listed beneath it as they are. Also, below those categories, I want to start another categories column. My site deals with two separate types of products which I don't particularly want to intermingle together under one categories heading. Can anyone give me a suggestion? And remember I'm new at this. First, to change any of the text, you need to edit the language file(s) that contain it. To find out which file open your Admin> Tools> Developers Tool Kit - enter the term you need to find in the lower left hand box, choose all files and click go.

To have two separate category sections you need to use two Product Types. Set up your second set of categories under the Document Product Type.
