How I can not charge a customer until I ship the goods?

Hello,

I have authorize.net like Merchant Gateway System.
I follow the tutorial which explains it :

BUT what I want is when I change my order status in the admin, (for exemple when I choose "processing") the customer's credit card is charged adn I don't need to log on authorize.net website to do it.
I don't know how to do it. I can code and use Mysql.
Does someone already done it?

P.S: One of my friends built is own ecommerce and did it with verisign.
