I have a range of art pieces that vary in price.

I want to add a single option to all items of "Special Edition - Signed by Artist" for an additional $x.xx.

I'm looking at the attributes and don't see how to leave my products with their own pricing and simply add this as an option. Is that possible?

Absolutely. That is the most basic way of using attributes.

Just add the option in Attributes Controller for each product, and give it its additional price with the "+" prefix.

Don't make your products "priced by attributes".
