Delete/Change shipping chosen by customer

Even tho' I'm running a special that includes free shipping in USA, MX, and CA for orders over $20US, I had a customer select UPS (at $10.13) as their shipping method. To make a long story short, they now want to get the free shipping and I'd like to remove/replace their method to make their total what it should be. Can I just go into PHP Admin and modify zen_orders_total and avoid having to install one of the contributions like Super Order or Edit Order?
