I tried to test my 404 not Found page and I'm getting and error saying: Additionally, a 404 Not Found error was encountered while trying to use an ErrorDocument to handle the request. Help appreciated.

I didn't name it. I thought I could use the page: define_page_not_found.php. But I guess not. Could you please refer me to an useful post that's talks about how to set up the 404 page Not found.

I think that what you are faced with is the stock Apache 404 page and not specifically a Zen Cart Issue - the following link is only one of many that can guide you in creating a custom general 404 page - find one HERE
