HOW-TO: customize # of categories from a template

Hi. I have a mission to develop an online store within a few weeks but I'm totally new to zen cart. I'm planning to buy a template from templatemonster.com.

I have 1 quick question:

I found most of the templates have a pre-designed category fields, for example, one of the templates I like shows 15+ categories while I have only 3 categories.

Is it possible to work on this? Has anyone done something like this? Any advice for a novice like me would be really appreciated also.

Before purchasing a template, please do a search of the forum for the designer. I would not recommend the one you have mentioned.

Categories are dynamically generated by the program and you can use as many or as few as you need.

Thanks for your reply. Is there a specific reason(s) that you dont' recommed pre-designed templates? You can send me a private message if you don't think it's plausible to reply here.

Like I said, I need to build a site without wasting any time right now, and that was why I thought about buying from them. Any suggestion or recommendation is all welcomed.
