Keep product display while sold out

I don't know if this is possible but can i have the product stay display while it's out of stock?

Mostly of the time when a customer order all quantity of that product and it will disappear until i have to check it "in stock" and leave zero in "quantity".

Any help would appreciate!

admin > config > stock > Products status in Catalog when out of stock should be set to > set to "1"

This question was pretty useful in helping me figure out the site. But is there a way to make this feature work for specific products rather than everything as a whole?
