How best to set up workshops?

Hi all!

I'm setting up a ZC install for a client of mine who offers Yoga workshops. They are single-day events with a limited seating.

I'd like to take advantage of the product-quantity attribute to limit the number of seats sold.

I'd also prefer to have the workshop appear as just a single product, but allow customers to choose their preferred date. And to have the date disappear from the option menu once it's passed.

Those two things seem incompatible. Attributes don't have a quantity associated with them, just the product as a whole, right?

Worst case scenario, I can just make a new product for each workshop, named for the day it occurs, but is there some solution that will allow me to achieve the above objectives?

Joomla has an events calendar where people can pay online for classes based on time and date. I wish ZenCart had this feature.
