Country

I need a little help. I only sell local and they must pick up the item.
In the create account I have managed to hide some fields so they don't work or are hidden throu much reserch looking all day in fourm. Ok here is what I need. I need to hide the countries from the form. They must still work so I don't get errors not having countries or need to pick from pull down. I seen it done on one zencart site but he/she does not answer my request.
Any help or suggestions regarding this, would help finish my site.
