strange problem updating status of one order

Strange problem...

processing orders, all are fine, but 1 specific one...

marked order shipped

and says:
Email Error: Could not instantiate mail function. Please check Admin->Configuration->Email Options->Email Transport.

then go back and on top in red it says:
Error ERROR: Failed sending email to: "Dominique Doyle" with subject: "Order Update #4415" Could not instantiate mail function. Please check Admin->Configuration->Email Options->Email Transport.

then on the bottom under date added, customer notified status, comments, etc... there is a red x and no status for 3 lines of trying to marked shipped...

all other orders fine....

any ideas?
