the -> is showing because you have Sub Categories under this Main Category.

No, you can't.

You can recreate the look of an osC template in Zen Cart, but you will need to start pretty much from scratch, possibly reusing any image files from the old template.

Most of this one will be done with CSS in the stylesheet.

There will be several background image snippets that repeat horizontally to get the gradient strips in the header, and the language & currency selectors and shopping cart summary in the header can I think all be gotten from the Downloads section here, or else from forum posts that describe how to do them.
The row of red buttons in the header can be done with the ez-page header bar, styled with button images on a gradient bg.

The rounded corners on the sideboxes and centerboxes can be done using the sliding door method (google for the tutorial); the centerboxes may require an extra wrapper div or two inserted in the code. You will need the image sections for these boxes.

The big thing is to get the Firefox Web Developer extension (and possibly Firebug too). These will let you easily find out what classes, ids etc. to attach background images, colors and sizes to, and see the results of CSS changes instantly while you are working on things.
