Local version of remote site

I currently have a live website and would like to create a local version so I can experiment before I install something on the live site.
I have previously installed xampp and had the site local but its changed alot since I moved it to the server.
What I would love to do is back up my store and database and make as few changes to those as possible to get them to run locally.
I have tried creating a new database in myphp admin and importing the existing text file but got an rather large error message regarding headers and the import didn't have all the tables.
If someone could outline a procedure for me I would really appreciate it.
