Newbie questions!!!!!

HI just installed and finding my feet.
How do I change the currency from Dollars to Uk pounds?
Also can somebody tell me how I creat subcatagories in the catagory sections ?
i.e I sell watch straps and need to differentiate the different brands I have in the product section!
