ship only to some countries only, based on category

I've figure out how to limit the countries my store can ship things to. Now I need to take it one step further and configure it such that items in category 1 can be shipped to either the US or Canada. Items in category 2 can only be shipped to the US. How possible is this?

thanks for the help. I've learned a lot reading other forum posts but can't find anything that addresses this question.
