Page configuration: Ow, my head hurts!

See how my Specials page displays many rows of thumbnail links? How can I have individual categories do the same? :huh: For example; I would like this Pendant category to display maybe 20 thumbs per page instead of being spread out 4 per page over 5 pages.

OK, different, site same question but more specific: On my All Products I would like to have this type of page layout, 3 per row. On this site I am only getting one per row, despite the recommeded setting of Configuration > Maximum Values > Products Listing- Number Per Page. On other pages, such as the product listing page I do have the 3 per row that I like.

Any ideas how to achieve this on the All Products page?
