Customer details

I don't want Zencart to collect the customers address as I don't want to have to pay out for a SSL certificate.

Can I disable it or fill in the fields to say something like "please leave blank"?

No, you can't just do that.

There are a couple of 'checkout without login' mods in the Downloads area.
