How do I keep the "xx Units in Stock" from displaying

Start with a search of the tutorials/FAQs (link at the top of this page. Consider buying the book which explains all of the cool things you can do from your Admin.

It's not real intuitive, and I found nothing in the FAQ that explained how to do this. Turns out you have to go where you least expect: Catalog->Product Types->Product-General->Edit Layout.

You're assuming that the relationship between "product type" and "quantity" is known and/or obvious. I ended up just looking at the code to figure it out because I got tired of working through all the obvious choices.
