Don't need Cart?

I have been using zen cart and I love it but I am changing credit card provider for my transactions. I do not need my online cart to work I just need it to take the order and provide me all of the information so I can manually process the card information at later time. I still want to use the shipping module and I also use paypal but I am just trying to find out if I can do this...Thanks...I am so glad to have found zencart....

This is what the "Credit Card - Offline Processing" payment method is for.
