Is there a way to make my own attributes?

I want to make my own attributes. I guess that is what it is called where you can decide on the size or color. But I need it to be able to make it an exact size for a customer to choose from. So I would like to type in what I need.

Is there a place that gives directions on this? Also how can I get it to be placed on a product? I saw where you can make the colors or sizes but could not get it to show up on a product.
