Changing the shipping options text on the confirmation page

I want to change the text that is displayed on the delivery confirmation page based on the shipping method chosen -- specifically, I want to remind them that if they've chosen store pickup (code: storepickup) that they will receive a phone call when their order is ready.

I know that I need to change the following lines in tpl_checkout_confirmation_default.php:

<h1><?php echo HEADING_SHIPPING_METHOD; ?></h1>

However, I don't want to do a direct if($order->info['shipping_method'] == 'A bunch of text') because my shipping text is SO long.

I thought perhaps the shipping code was in with info, but appears not to be. $_SESSION['shipping'] is an array of who-know-what.
