I know that we can delete and place the banner ads but how do we go about placing the ads and using them to advertise other companies besides Zen Cart?

In your admin go to:
tools>banner manager you can edit/create banners
It allows for your own custom sizing, images, web links as well as being able to automatically set when its shown on the site etc...
