Changing sort order in admin - no change in online cart

I'm using version 1.3.7.1 and have a problem with product sorting. I've read other threads that show me how I can sort by products model, products name and other features by selecting them in the Categories/Product Display Order box on the product listing menu. This changes the sort order on the admin page but not on my online catalog. How do I change the online catalog sort order. I'm trying to sort by model number.

I dont show the model number, but it looks like you can adjust it in the 4 digit codes :)

Unfortunately, I am trying to remove the model column from just one category in my cart. I believe the cofiguration > all listings control sets the display for all categories.

Will this require a special product listing module?
