re: which email template to edit - edit all of them - you want all of your emails to have consistent layout when it comes to headers, layout, colors, and other various elements of style in order to communicate professionalism to your customers.
If you want to edit the language in the emails, you need to find the appropriate file that defines the language you want to change. Instructions to do that can be found here and also here
If you want to edit the style of your email templates, you must edit the Zen Cart email template files.
Your Zen Cart email template files are found in the email folder in your cart's main directory folder. They are named in a very obvious manner so you can tell which template controls which type of email. For example, the welcome email template is named email_template_welcome.html.
Most importantly, the default email template file must also be edited.
You need to know how to write in html and apply in line styling in order to edit these templates. If you don't know how to do that, a google search of W3Schools will help you find a site that can help you.
Even though Mailbeez uses Zen Cart email templates, I still had to do some editing of the Mailbeez email files for each mod I installed in order to ensure consistency with my existing Zen Cart email template modifications. (the header, the language, the spacing, etc).
Since you seem to have a difficult time finding your way around Zen Cart, it's files and folders, and vast array of instructions and tutorials, I recommend you pay someone to do this for you - unless you're interested in investing the time required to learn it for yourself - which is always a great idea unless you're under a time crunch.
I believe Cord has extended the offer to do your editing for you on a for fee basis - you might consider taking him up on it.
