I'm trying to get hold of HostGator to find out why their cPanel says I'm using one version of php, but ZenCart thinks I'm using another...it's going to be a long wait because they're still trying to dig out from all their servers being down for 4 hours yesterday...which no doubt contributed to the problems I was having. Can anything be done in the meantime?
Too be perfectly honest, if you know that HostGator are having thier own issues, I'd be inclined to do nothing until they've been resolved. You could quite easily be digging yourself into a deeper and deeper hole (or at the very least, going around and around in circles).
What I can do for you though is save the wait for a response. The reason why Cpanel is reporting one version of PHP and ZenCart another can be because the PHP version can be configured/set on a (sub)domain name (host) basis, IOW, there could be dozens of sites hosted on the same server, each with a different version of PHP, and although it isn't obvious to most people
https://www.yourdomain.com and cpanel.yourdomain.com are different hosts and therefore it is easily possible for them to be using different PHP versions.
You only need to concern yourself with what ZenCart is reporting as the version being used.

OK, I've just been taking a look at the HostGator help pages
This page:

States that on a shared hosting the current default is (or should be) php 5.4.x
V5.2 (which is what your zencart is reporting is flagged as being available but deprecated and no longer being updated.
This implies that you probably have something set somewhere that is forcing the use of V5.2 .. Most likely in the .htaccess file in the root folder of your store, or possibly the php.ini file (also in the root folder of your store)
To change to use PHP V5.4 the first thing you should do is check these files and delete any lines that read like
AddHandler application/x-httpd-php52 .php
Save the files when done, and if you are lucky the next time you check via ZenCart you'll be using php5.4
If not, then try adding this line
AddHandler application/x-httpd-php54 .php
to your .htaccess file.

You can also use the 'PHP Configuration' option in cPanel. Click on the link I've just given and follow the step by step instructions. I suggest you try this method before the other methods. Not all cPanel's provide this option, but apparently HostGator does.
I suspect that with the newer PHP version activated most, if not all of your problems will simply go away.
